Simple, fresh ingredients, delicious flavour, and ready in 30 minutes!
Ingredients:
300g/10.5oz Pasta
250g/8.8oz Ricotta
100g/3.5oz Rucola/Argula
2 Garlic Cloves, minced
1/2 Cup Parmesan Cheese
1 Tsp Lemon Pepper Seasoning
1 Tsp Italian Seasoning
Zest and Juice of a small Lemon
2 Tbls Olive Oil
Salt & Pepper
Serving:
Chilli Flakes
Roasted Pinenuts
Drizzle Olive Oil
Method:
Cook pasta al dente, reserving 1 cup of cooking water.
Meanwhile make the ricotta sauce. In a medium bowl, combine the ricotta, olive oil, parmesan cheese, garlic, lemon pepper, Italian seasoning, lemon zest and juice. Season with salt and pepper.
Add the ricotta mixture to the cooked pasta and 1/2 cup cooking water to loosen up the sauce (add more if needed). Stir well to evenly coat the pasta then stir in the rucola.
Serve immediately and garnish with pinenuts, extra parmesan cheese, lemon zest, pinch of chilli flakes and a drizzle of olive oil.
