Easy Giardiniera Recipe

Ingredients:

  1. 1 cup of cauliflower florets
  2. 1 cup of sliced carrots
  3. 1 cup of sliced bell peppers
  4. 1 cup of sliced celery
  5. 1 cup of pickled hot peppers
  6. 1/4 cup of salt
  7. 2 cups of white vinegar
  8. 1 cup of water
  9. 2 cloves of garlic, minced
  10. 1 tablespoon of dried oregano
  11. 1 teaspoon of red pepper flakes

Directions:

  1. In a bowl, mix together the cauliflower, carrots, bell peppers, celery, and pickled hot peppers.
  2. Sprinkle salt over the vegetables, toss to coat, cover, and let sit for about 2 hours.
  3. Rinse the salt off the vegetables thoroughly and drain well.
  4. In a saucepan, combine the white vinegar, water, garlic, oregano, and red pepper flakes. Bring to a boil.
  5. Pour the hot liquid over the vegetables in a large jar or container, making sure all the veggies are submerged.
  6. Let the Giardiniera cool to room temperature, then cover and refrigerate for at least 24 hours before serving.
  7. Enjoy your homemade Giardiniera as a tangy and crunchy addition to sandwiches, salads, or antipasto platters!
