Ingredients:
- 1 cup of cauliflower florets
- 1 cup of sliced carrots
- 1 cup of sliced bell peppers
- 1 cup of sliced celery
- 1 cup of pickled hot peppers
- 1/4 cup of salt
- 2 cups of white vinegar
- 1 cup of water
- 2 cloves of garlic, minced
- 1 tablespoon of dried oregano
- 1 teaspoon of red pepper flakes
Directions:
- In a bowl, mix together the cauliflower, carrots, bell peppers, celery, and pickled hot peppers.
- Sprinkle salt over the vegetables, toss to coat, cover, and let sit for about 2 hours.
- Rinse the salt off the vegetables thoroughly and drain well.
- In a saucepan, combine the white vinegar, water, garlic, oregano, and red pepper flakes. Bring to a boil.
- Pour the hot liquid over the vegetables in a large jar or container, making sure all the veggies are submerged.
- Let the Giardiniera cool to room temperature, then cover and refrigerate for at least 24 hours before serving.
- Enjoy your homemade Giardiniera as a tangy and crunchy addition to sandwiches, salads, or antipasto platters!
