1 lb ground beef
1/2 lb ground pork
1 medium onion, diced
1 green bell pepper, diced
3 cloves garlic, minced
1 cup long-grain white rice
2 cups chicken broth
1 (14.5 oz) can diced tomatoes
1 tbsp Creole seasoning
1/2 tsp dried thyme
1/2 tsp dried oregano
1/4 tsp cayenne pepper (optional)
Salt and pepper, to taste
2 green onions, chopped (for garnish)
Directions:
Cook the Meat:
In a large skillet or Dutch oven, cook the ground beef and ground pork over medium heat until browned, breaking it up with a spoon. Drain excess fat if needed.
Sauté Vegetables:
Add the diced onion, green bell pepper, and minced garlic to the skillet with the meat. Cook until the vegetables are tender, about 5 minutes.
Add Rice and Liquids:
Stir in the rice, chicken broth, diced tomatoes (with their juice), Creole seasoning, dried thyme, dried oregano, and cayenne pepper if using.
Simmer:
Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 20-25 minutes, or until the rice is cooked and the liquid is absorbed.
Season and Serve:
Season with salt and pepper to taste. Garnish with chopped green onions before serving.
