Oven-baked cod fillets with a few spices and a mixture of lemon sauce and garlic. A perfect, quick, healthy dinner for those busier days all done in 30 minutes!
Ingredients:
5 Cod Fillets, fresh or frozen
Fresh chopped parsley for garnish
Coating:
1/3 Cup Plain Flour
1 Tsp Ground Coriander
3/4 Tsp Sweet Paprika
3/4 Tsp Ground Cumin
1/2 Tsp Garlic Powder
1/2 Tsp Onion Powder
Salt & Pepper
Lemon Sauce:
5 Tbls Fresh Lemon Juice
5 Tbls Olive Oil
2 Tbls Butter
5 Garlic Cloves, minced
Method:
Preheat oven to 200C/400F.
Mix together the lemon juice, olive oil and melted butter in a shallow bowl.
In another shallow bowl, mix the flour and seasonings.
Pat the fish dry with paper towels. Dip the fish in the lemon sauce, then into the flour mixture. Shake off excess flour. Reserve lemon sauce for later and add the minced garlic.
Heat 2 tablespoons olive oil in a pan and over medium-high heat sear the fish on both sides but do not fully cook through. Transfer to a baking dish. Drizzle the remaining lemon sauce all over the fish fillets.
Bake in heated oven for about 15 minutes or until fish is fully cooked through.
Garnish with fresh chopped parsley and serve.
