Delicious Smashed Avocado Bruschetta

Ingredients:

1 large ripe avocado
1 tablespoon fresh lemon juice
Salt and freshly ground black pepper to taste
1/4 cup cherry tomatoes, diced
2 tablespoons red onion, finely chopped
2 tablespoons fresh basil, chopped
1 baguette, sliced into 1/2-inch slices
2 tablespoons olive oil
1 garlic clove, peeled and halved
Balsamic glaze (optional)
Crumbled cheese on top ( Optional)

Instructions :

Preheat the oven to 400°F (200°C).
In a medium bowl, mash the avocado with a fork until smooth. Add the fresh lemon juice, salt, and black pepper, and mix well.
In a separate small bowl, combine the diced cherry tomatoes, red onion, and fresh basil.
Arrange the baguette slices on a baking sheet. Brush each slice with olive oil.
Bake in the preheated oven for 5-7 minutes, or until the bread is golden and crispy.
Remove the baguette slices from the oven and rub each slice with the halved garlic clove for extra flavor.
Spread a generous amount of the smashed avocado mixture on each toasted baguette slice.
Top with the tomato mixture and drizzle with balsamic glaze if desired.
Serve immediately and enjoy!
