Ingredients
350g/10.6oz Cabbage, thinley sliced
2 Carrots, grated
1 Large Potato, grated
2 Onions, finely chopped
1 Red Bell Pepper, chopped into 1 inch lengths
1 Tomato, diced
3 Eggs, beaten
1 Tsp Ground Cumin
1/2 Tsp Piri Seasoning or Mild Chilli Powder
50g/1.76oz Plain Flour
150g/5.3oz Shredded Cheddar Cheese
Salt and Pepper
Method:
Heat a little olive oil in a large deep pan and cook onions and peppers until slightly softened.
Add the potatoes and carrots. Cook until softened, continuously stirring and cover in between for a few minutes.
Add tomatoes, stir through, then add the cabbage and continue cooking covered but stirring through in between until all vegetables have softened.
Transfer to a large bowl, add the eggs, cumin, piri seasoning or chilli powder, salt/pepper stir through then add the flour. Mix well until well combined.
Transfer to an oiled greased dish.
Top with grated cheddar and bake in oven 200C/400F for 45 minutes.
