Ingredients :

For the salad:

* 1 head chopped romaine lettuce

*1 cup cherry tomatoes, halved

* 1/2 cup cucumber, diced

* 1/4 cup red onion, finely sliced

*1/4 cup grated feta cheese

* 1/4 cup chopped fresh parsley

For the grilled chicken:

*2 boneless skinless chicken breasts

* 1 tablespoon of olive oil

* 1 teaspoon of lemon juice

* 1/2 teaspoon garlic powder

* 1/4 teaspoon of salt

* 1/4 teaspoon black pepper

For the dressing:

* 1/4 cup olive oil

* 2 tablespoons of lemon juice

* 1 tablespoon of Dijon mustard

* 1 teaspoon of honey

* 1/2 teaspoon of salt

* 1/4 teaspoon black pepper

Instructions :

Prepare the salad:

* In a large bowl, combine lettuce, tomatoes, cucumber, red onion, feta cheese and parsley.

Prepare the chicken:

* In a small bowl, whisk together the olive oil, lemon juice, garlic powder, salt and pepper.

*Brush chicken breasts with marinade and let them sit for 10 minutes.

* Grill chicken breasts for 6-8 minutes per side, or until cooked through.

*Let the chicken rest for 5 minutes before slicing.

Making the dressing:

* In a small bowl, whip together all the ingredients for the dressing.

Assemble the Salad:

*Add grilled chicken to salad.

* Drizzle the dressing over the salad and discard dressing.
