DATES PECANS AND COFFEE BLISS BALLS

The perfect mid-morning or afternoon pick me up!

 

Ingredients:

100g/3.5oz Pitted Dates

150g/5.3oz Pecans

75g/2.6oz Ground Almonds (plus extra for rolling)

1 Tsp Vanilla Essence

1 Tbls Cocoa Powder

1 Tbls Honey (heaped)

50ml Diluted Coffee

 

Method:

Soak the dates in the coffee for 30 minutes to 1 hour.

Once their time is up, drain excess liquid off but do not squeeze the dates dry. Roughly chop them and set aside.

Place the pecans in a food processor and pulse mix until they are fairly powdery. Add the ground almonds, honey, cocoa powder, vanilla essence and chopped dates and blitz until you have a smooth texture.

The final texture will depend on how moist your dates were. If the mixture doesn’t stick, add a little bit more honey or coffee; if it is too wet, add some more ground almonds.

Form into balls and roll into ground almonds.

Keep refrigerated in a plastic container.
