CRUSTLESS BACON SPINACH & MUSHROOM QUICHE

An easy and quick way to prepare a quiche without having to make a pastry base…Yummy for Lunch Dinner or ANY time of day!

 

Ingredients:

Mushrooms, sliced

Onion, sliced

150g/5.3oz Streaky Bacon, chopped

100g/3.5oz Baby Spinach

100g/3.5oz Cheddar Cheese, shredded

1/2 Teaspoon Thyme

8 Eggs, room temperature

3/4 Cup Emlea Double Cream (Heavy Cream)

Salt and pepper

 

Method:

Cook bacon and remove from pan.

Add the onions and cook until slightly softened then add the mushrooms and thyme. When the mushrooms have softened, stir in the spinach and cook until just wilted. Remove from heat and transfer 3/4 of the filling to a butter greased pie dish.

Beat the eggs, cream, salt and pepper together and stir in the cheddar cheese.

Pour over the filling, scatter the remaining mushrooms, onions and bacon on top and bake in oven 180C/350F for approximately 45 minutes or until set and golden on top.

Serve with fries or potatoes of your choice or a crispy side salad.

Any leftovers the next day add it to toast or a baguette. Enjoy!
