Ingredients:
2 lb boneless, skinless chicken thighs
1 cup pineapple juice
1/3 cup soy sauce
1/3 cup brown sugar
3 cloves garlic, minced
1 tbsp ginger, minced
1/2 tsp crushed red pepper flakes
1/4 cup cornstarch
1/4 cup water
Green onions and sesame seeds for garnish
Instructions:
Place chicken in the slow cooker.
In a bowl, mix pineapple juice, soy sauce, brown sugar, garlic, ginger, and red pepper flakes.
Pour the mixture over the chicken.
Cook on low for 4-6 hours or high for 2-3 hours.
Remove chicken, shred, and set aside.
Mix cornstarch and water; add to the slow cooker.
Cook on high for 15 minutes until thickened.
Return chicken to the sauce, stir, and garnish with green onions and sesame seeds.
