Ingredients:

4 boneless, skinless chicken breasts

1/2 cup soy sauce

1/2 cup brown sugar

1/2 cup ketchup

1/2 cup pineapple juice

1/4 cup rice vinegar

2 tablespoons ginger, minced

4 cloves garlic, minced

1 tablespoon sesame oil

1 cup pineapple chunks

2 green onions, sliced (for garnish)

Sesame seeds (for garnish)

Directions:

In a bowl, whisk together soy sauce, brown sugar, ketchup, pineapple juice, rice vinegar, minced ginger, minced garlic, and sesame oil until well combined.

Place the chicken breasts in the crock pot.

Pour the sauce mixture over the chicken, ensuring each piece is well-coated.

Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and fully cooked.

During the last 30 minutes of cooking, add the pineapple chunks to the crock pot.

Once cooked, remove the chicken from the crock pot and shred it using two forks.

Return the shredded chicken to the crock pot and stir to combine with the sauce.

Serve the Huli Huli chicken over rice, garnished with sliced green onions and sesame seeds.
