Instructions:
In a shallow bowl, whisk together the flour, cornmeal, garlic powder, paprika, cayenne pepper, salt, and black pepper.
In another bowl, whisk the egg and buttermilk together.
Dip each catfish fillet into the wet mixture, then coat evenly in the dry cornmeal mixture. Press gently to ensure an even coating.
Heat about 2 inches of vegetable oil in a large skillet over medium-high heat.
