Corn Salsa

Ingredients

– ½ bell pepper – chopped

– 1/4 cup chopped celery

– 5 ears of fresh corn – quick boil and sliced from the cob

– ½ cup of fresh basil – chopped

– 1 clove of garlic – chopped

– ½ jalapeño – chopped with seeds

– ¼ red onion – chopped

– salt, black pepper – to taste

– 1/4 cup sugar

– 1 sweet pickle

– 1 vine ripe tomato – diced

– ¼ cup vinegar

 

Preparation

Combine all of the above ingredients in a bowl.

 

Combine the ingredients for the dressing and add to the salsa.

 

Serve chilled.
