Classic Steak Frites recipe – a French-inspired dish pairing a perfectly cooked steak with crispy, golden fries.

Ingredients

For the Steak:

2 ribeye or New York strip steaks (1 to 1½ inches thick)

Salt and freshly ground black pepper, to taste

2 tbsp olive oil

2 tbsp butter

3-4 garlic cloves, smashed

Fresh thyme or rosemary sprigs (optional)

For the Fries:

3 large russet potatoes, peeled and cut into thin fries

3-4 cups vegetable oil (for frying)

Salt, to taste

For Serving:

Fresh parsley, chopped (optional garnish)

Steak sauce, béarnaise, or garlic aioli (optional)

Directions

Prepare the Fries:

Soak the Potatoes:

Place the cut potatoes in a bowl of cold water and soak for at least 30 minutes (or up to overnight). This helps remove excess starch for crispy fries.

Dry the Potatoes:

Drain the potatoes and pat them dry with paper towels.

Fry the Potatoes (First Fry):

Heat the oil in a large, heavy pot or deep fryer to 300°F (150°C). Fry the potatoes in batches for 4-5 minutes until they’re soft but not browned. Drain on paper towels and let them cool.

Fry the Potatoes (Second Fry):

Increase the oil temperature to 375°F (190°C). Fry the potatoes again in batches for 2-3 minutes or until golden and crispy. Remove and drain on paper towels, then season with salt.

Cook the Steak:

Season the Steaks:

Let the steaks sit at room temperature for 30 minutes. Pat them dry, then season generously with salt and black pepper.

Sear the Steaks:

Heat a large cast-iron skillet over medium-high heat. Add the olive oil. Once hot, add the steaks and cook for 3-4 minutes per side for medium-rare, or until desired doneness.

Add Butter and Aromatics:

During the last minute, add butter, garlic, and thyme or rosemary sprigs. Tilt the pan and spoon the melted butter over the steaks for added flavor.

Rest the Steaks:

Remove the steaks from the pan and let them rest for 5-10 minutes.

Slice the steaks if desired and serve with the crispy fries on the side.
