Citrus Chicken With Apricot, Peanuts & Mint

Ingredients

– 1/4 teaspoon Apple cider vinegar

– 1 tablespoon Butter

– 3 Chicken breast fillets cut into thin strips

– 3 Green chilly (increase for more spicy)

– 1 teaspoon Freshly ground ginger paste

– 1 tablespoon Lime juice

– 3 sprigs Mint, leaves only, chopped

– 3 cups Freshly Made Orange juice

– 2 teaspoons Orange zest

– 1 cup Roasted Peanuts

– Salt to taste

– 3/4 tablespoon Sugar-

– 8 cups Dried apricots – chopped into small pieces and soaked in water for 3 hours (drain when ready to cook)

 

Preparation

Marinate chicken in listed ingredients and refrigerate for 15mins.Meanwhile, melt butter in a large sauce pan.

 

Add orange juice, water drained from soaked apricots and sugar.

 

Let it simmer on a high flame.When the quantity reduces to ALMOST half, add chicken and stir.Now let the mixture cook with lid closed till it starts to thicken.Open peanuts pack and empty it into the pan.

 

Mix well and switch heat off when consistence is as thick as in picture.

 

Garnish with chopped mint leaves and serve with jasmine rice or basmati.
