Cheesy Stuffed Meatloaf Bites

Ingredients:

For the Meatloaf:

1 lb ground beef

1/2 lb ground pork (or more beef if preferred)

1/2 cup bread crumbs

1/4 cup grated Parmesan cheese

1/4 cup chopped parsley

1 egg

1/2 cup milk

1 onion, finely chopped

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

For the Filling:

1 cup shredded cheddar cheese

1/2 cup cream cheese, softened

For the Topping (Optional):

1/4 cup ketchup

1 tablespoon brown sugar

 

Instructions:

Prepare the Meatloaf Mixture:

In a large bowl, combine the ground beef, ground pork, bread crumbs, Parmesan cheese, parsley, egg, milk, chopped onion, minced garlic, dried oregano, dried basil, salt, and pepper. Mix until well combined.

Prepare the Filling:

In a separate bowl, mix together the shredded cheddar cheese and cream cheese until well blended.

Shape the Meatloaf Bites:

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.

Take a small amount of the meat mixture and flatten it in your hand. Place a spoonful of the cheese mixture in the center. Fold the meat around the cheese and shape it into a ball. Repeat with the remaining meat and cheese mixture.

Bake:

Place the meatloaf bites on the prepared baking sheet. If using the topping, mix the ketchup and brown sugar together and spoon a small amount over each meatloaf bite.

Bake for 20-25 minutes, or until the meatloaf bites are cooked through and reach an internal temperature of 160°F (71°C).

Serve:

Allow the meatloaf bites to cool slightly before serving. They can be served as a main dish or as an appetizer.

Variations: Feel free to experiment with different types of cheese or add herbs and spices to the meat mixture for additional flavor.
