CAPRESE STUFFED AVOCADO

Sweet and juicy cherry tomatoes with fresh mozzarella balls are tossed in a basil pesto and a touch of garlic, then filled into Avocados for a delicious light lunch, dinner, snack or appetizer!

 

Ingredients:

2 Ripe Avocados peeled

1/2 Cup Cherry Tomatoes halved

120g/4oz Baby Mozzarella Balls halved

2 Tbls Basil Pesto

1 Tsp Garlic minced

1/4 Cup Olive Oil

Salt/pepper

1/2 Lime

2 Tbls Fresh Chopped Basil

Balsamic Glaze to drizzle

 

Method

Combine tomatoes, mozzarella balls, pesto, garlic, olive oil, salt/pepper in a bowl.

Prepare avocado halves by just cutting the whole slightly bigger on the outer side. Squeeze some lime juice over them to keep their colour. Place on a plate with fresh chopped basil.

Spoon the Caprese filling into each avocado half and drizzle with balsamic glaze. Top with fresh chopped basil and serve.
