Ingredients

– 1 tablespoon apple cider vinegar

– 1 cup fine-grind bulgur

– 1 can black beans

– 1 can (8 oz) pineapple

– 1 teaspoon lime juice

– 1 cup red bell pepper, chopped

– 2 scallions, chopped

 

Preparation

Add 1 cup cold water to the bulgur; let sit for 30 minutes or until water is fully absorbed.

 

Drain the beans and pineapple and mix with pepper, scallions, vinegar, lime juice and bulgur.
