Peach Cobbler Pound Cake Recipe

 

Ingredients:

 

For the Cake:

1 cup unsalted butter, softened

2 cups granulated sugar

4 large eggs

1 tsp pure vanilla extract

3 cups all-purpose flour

2 tsp baking powder

1/2 tsp salt

1 cup whole milk

2 cups fresh peaches, peeled and diced (canned peaches can be used if fresh aren’t available, but drain them well)

 

For the Streusel Topping:

1/2 cup brown sugar, packed

1/2 cup all-purpose flour

2 tsp ground cinnamon

1/4 cup unsalted butter, cold and diced

 

Instructions:

 

1.Prepare the Oven and Pan:

-Preheat the oven to 325°F (165°C).

-Grease and flour a bundt pan or tube pan.

2.Make the Streusel Topping:

-In a medium-sized bowl, combine brown sugar, flour, and cinnamon. Add in the diced cold butter and use a pastry cutter or your fingers to incorporate the butter until the mixture resembles coarse crumbs. Set aside.

3.Cake Batter:

-In a large bowl, cream together the softened butter and sugar until light and fluffy.

-Beat in the eggs, one at a time, ensuring each is fully incorporated before adding the next. Stir in the vanilla extract.

-In another bowl, whisk together the flour, baking powder, and salt.

-Gradually add the dry ingredients to the butter mixture, alternating with the milk. Start and end with the flour mixture. Mix until just combined.

-Fold in the diced peaches.

4.Assemble and Bake:

-Pour half of the batter into the prepared bundt pan.

-Sprinkle half of the streusel topping evenly over the batter.

-Add the remaining batter on top and then sprinkle the rest of the streusel on top.

-Bake in the preheated oven for 60-75 minutes or until a toothpick or cake tester inserted into the center comes out clean.

-Let the cake cool in the pan for about 10 minutes, then invert onto a cooling rack to cool completely.

5.Optional Glaze (for added sweetness and presentation):

-Mix 1 cup of powdered sugar with 2-3 tablespoons of milk or heavy cream, adjusting the consistency to your liking. Drizzle over the cooled cake.
