Ingredients:

4-6 white fish fillets (cod, haddock, or tilapia)

1 cup all-purpose flour

1/4 cup cornstarch

1 teaspoon baking powder

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon paprika

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1 egg

1 cup cold water (or club soda for extra crispiness)

Vegetable oil for frying

 

Instructions:

  1. Prepare the Fish:

Pat the fish fillets dry with paper towels to remove any excess moisture, which helps the batter stick better to the fish.

  1. Make the Batter:

In a large mixing bowl, whisk together the flour, cornstarch, baking powder, salt, black pepper, paprika, garlic powder, and onion powder.

In a separate small bowl, beat the egg and then stir it into the dry ingredients.

Slowly add the cold water (or club soda for extra crispiness) while whisking until the batter becomes smooth, with a consistency similar to pancake batter.

  1. Fry the Fish:

Pour vegetable oil into a deep skillet or frying pan to a depth of about 2-3 inches and heat it over medium-high heat until it reaches 350°F (175°C).

Dip each fish fillet into the batter, ensuring they are fully coated.

Carefully place the battered fish into the hot oil, frying 2-3 fillets at a time.

Cook the fish for about 4-5 minutes per side, flipping halfway through, until they are golden brown and crispy.

Remove the fish from the oil with a slotted spoon and place on a plate lined with paper towels to drain any excess oil.

  1. Serve:

Serve the crispy fish immediately with dipping sauces like tartar sauce or lemon wedges.
