BAKED LEMON PEPPER CHICKEN THIGHS…SO JUICY AND TENDER!

An easy delicious recipe for those stress-free weeknight dinners!

 

Ingredients

5/6 Boneless Chicken Thighs depending on size

2 Tbls Olive Oil

2 Tbls Lemon Juice

1 Tbls Lemon Pepper Seasoning

1/2 Tsp Salt

1 Tsp Garlic Powder

1/2 Tsp Onion Powder

1/2 Tsp Italian Seasoning

1/2 Tsp Paprika

 

Method

Preheat oven to 200C/400F.

Line a shallow baking dish with foil.

Pat the chicken dry with paper towels.

Whisk together the olive oil and lemon juice in a small bowl.

Drizzle the olive oil mixture evenly over both sides of the chicken, rubbing to coat well.

In another bowl stir together the lemon pepper seasoning, salt, garlic powder, onion powder, Italian seasoning and paprika.

Sprinkle the spices evenly over the outside of the chicken thighs skin side up and fold them back together.

Place them on the prepared baking dish with foil and give them a last sprinkle of extra lemon pepper, paprika and Italian seasoning.

Bake in oven for approximately 35-45 minutes.

Serve and spoon the juices from the pan over the chicken.

NOTE: The normal chicken thighs with skin can also be used for this recipe but they will probably take about 10 minutes longer to cook.
