BAKED HONEY SESAME CHICKEN

If you love Chinese then this recipe is for you!

Ingredients

For the chicken

2 Chicken Breasts cut into 1 inch pieces

3 Large Eggs, beaten

1 Cup Cornflour (Cornstarch)

Salt/pepper

1/4 Cup Cooking Oil or more according to pan

Sauce:

3/4 Cup Honey

1/2 Cup Soy Sauce, low salt

1/2 Cup Ketchup

1/2 Cup Brown Sugar

1/2 Cup Rice Wine Vinegar or Apple Cider Vinegar

1 Tsp Minced Fresh Garlic

1 Tbls Sesame Oil

1 Tbls Cornflour

Sesame Seeds and Spring Onions for garnish

Method:

Preheat oven 180C/350F.

Season chicken with salt and pepper.

In separate bowls, place cornflour and beaten eggs.

Dip chicken pieces into cornflour then coat in egg mixture and back into cornflour.

Heat the oil in a skillet (the base of pan must be completely covered in oil) and cook the chicken in batches until browned. Place the chicken in a 9 x 13 inch greased baking dish.

In a mixing bowl, combine honey, soy sauce, ketchup, brown sugar, rice wine vinegar, sesame oil, minced garlic and tablespoon cornflour.

Pour over chicken and bake uncovered for 45 minutes or until chicken is cooked through. Turn the chicken half way through cooking time so it coats well with the sauce. The sauce will thicken while baking.

Serve on a bed of rice or noodles with sesame seeds, spring onions on top. Enjoy!

NOTE:

If you would like extra sauce on top, make an extra portion and cook it in a small pan on the stove.
