An easy and quick side salad dish that can be served with Steak, Grilled Chicken, Grilled Salmon or Ribs ????
RECIPE:
1 Tin Red Kidney Beans
1 Tin Chick Peas
1 Tin Sweetcorn
1 Orange Bell Pepper, diced
Cherry tomatoes, halved
2 Avocados, diced
Juice of 2 Limes
1/2 Cup Olive Oil
2 Garlic, crushed
Parsley
Salt/Pepper
Method:
Drain and rinse kidney beans and chick peas.
Mix all ingredients together in a large bowl or dish and refrigerate until serving.
NOTE: After cutting the avocado I squeezed one of the limes over it, then added it to the other ingredients with the juice as well. This will prevent it from turning brown.
