Ingredients:
- 2 ripe avocados
- 1 cup cherry tomatoes, halved
- 1 small red onion, thinly sliced
- 1 cucumber, peeled and diced
- 1/4 cup fresh parsley leaves, chopped
- Juice of 1 lemon
- 2 tablespoons extra-virgin olive oil
- Salt and pepper to taste
Instructions:
- Start by preparing the avocados. Cut them in half lengthwise, remove the pit, and scoop out the flesh with a spoon. Slice the avocado into bite-sized pieces.
- In a large mixing bowl, combine the avocado slices, cherry tomatoes, red onion, diced cucumber, and chopped parsley.
- In a separate small bowl, whisk together the lemon juice and olive oil. Season with salt and pepper to taste.
- Pour the dressing over the avocado salad and gently toss everything together until well coated.
- Allow the salad to sit for about 10 minutes to let the flavors meld together. This will also help soften the onions slightly.
- Give the salad a final toss before serving. You can adjust the seasoning if needed.
