A fresh, nutritious salad packed with protein and healthy fats!

Ingredients:

3 large eggs, hard-boiled and halved

1 ripe avocado, sliced

1 cup cherry tomatoes, halved

1 cup cooked corn kernels

1/4 red onion, finely chopped

1/4 cup feta cheese, crumbled

1 cup mixed lettuce or greens

Salt and pepper, to taste

A pinch of paprika or chili powder (optional)

Fresh cilantro, for garnish

 

Instructions:

Prepare the Ingredients:

Hard-boil the eggs, then peel and cut them in half.

Slice the avocado and halve the cherry tomatoes.

Finely chop the red onion.

Assemble the Salad:

In a large bowl, arrange the lettuce or mixed greens.

Add the hard-boiled eggs, sliced avocado, cherry tomatoes, corn kernels, and red onion.

Sprinkle the crumbled feta cheese on top.

Season and Garnish:

Season the salad with salt, pepper, and a pinch of paprika or chili powder if desired.
