A QUICK AND EASY APPLE STRUDEL

RECIPE:

Filling

2 Granny Smith Apples (Green), peeled and thinly sliced

1 Small Lemon

1 Tbls Ground Cinnamon

2 Tbls Sugar

3 Tbls Peach Jam plus 1 Tbls

Chopped Walnuts

Raisins

1 Rectangular Sheet of Puff Pastry

 

Topping:

Half a Granny Smith Apple, skin on and thinly sliced

1 Egg Yolk

1 Tbls Plain Yoghurt

Sugar

Chopped Walnuts

Rasins

Few dots of Butter

 

Method:

Place the sliced apples in a bowl, squeezed juice of a lemon, sugar and cinnamon and mix together.

Open the sheet of puff pastry and leave it on its paper.

Spread 4 tablespoons jam in the middle lengthwise.

Lay the sliced apples over the jam and top with a few walnuts and raisins.

Fold over one side of the pastry (which is nearest to you) over the apples.

Spread a little jam over the pastry and fold over the other side on top of it, till it covers the top, it doesn’t need to go all the way down over the side. Seal and press the edges with a fork (for the top just brush down slightly with the fork).

In a small bowl mix the egg yolk and yoghurt together and generously brush the pastry all over.

Top with sliced apples next to each other and brush with remaining egg yolk mixture. Put a few dots of butter on top. Sprinkle the apples with sugar and scatter a few chopped walnuts and raisins.

Bake in oven 180C/350F for 25 minutes or until pastry is golden.

Serve warm with vanilla ice-cream or whipped cream and enjoy!
