CHILLI SHRIMPS

Shrimps cooked in a rich and spicy tomato sauce and takes less than 15 minutes to make.

 

Ingredients:

500g/18oz Shrimps, fresh or frozen defrosted

1/4 Cup Olive Oil

1 Onion, diced

4 Garlic Cloves, minced

1 Red Bell Pepper, cut into short strips

250g/8.8oz Whole Cherry Tomatoes

1/2 Tsp Schwartz Piri Piri Seasoning or Chilli Flakes

2 Tsp Dried Oregano

1/2 Tsp Paprika

300ml Tomato Sauce (Juice)

1 Tbls Tomato Paste

1 Tbls Chilli Sauce or more to your liking

Salt and Pepper

 

Topping:

Feta Cheese, crumbled

Fresh Parsley, chopped

 

Method:

Heat the olive oil in a large skillet and saute the onion until softened.

Add the minced garlic, red pepper strips, cherry tomatoes, piri seasoning (chilli), oregano and paprika and saute for about 5 minutes.

Add the tomato sauce and paste. Season with salt and pepper and cook stirring regularly for 3 minutes.

Add the shrimps to the pan with the chilli sauce. Stir, cover your skillet, and simmer for 5 minutes.

Top shrimps with crumbled feta and chopped parsley.

Serve with crusty toasted bread brushed with olive oil or rice.
