JELLY CAKE – LAMINGTON WREATH

Turn your love for Lamingtons into a fabulous Dessert…The ultimate Lamington and cream indulgence!

Jelly Cakes-Lamingtons are a soft and fluffy sponge cake dipped in jelly then rolled in coconut or dipped in chocolate icing and rolled in coconut. Originally from Australia but have also become a Maltese favourite treat!

 

Ingredients:

5 Jelly Cakes/Lamingtons sliced into 4 equal portions.

250ml Fresh Cream (Whipping Cream) whipped

Fresh Strawberries/Blueberries

Strawberry Sauce (Optional)

 

Method:

Pipe the whipped cream onto each side of the Lamington, sticking them together as you go around and form a circle.

Garnish with fresh strawberries and blueberries, plus extra for serving and drizzle with strawberry sauce.
