BACON MUSHROOM & FETA CRUSTLESS QUICHE – FRITTATA

Yummy for Lunch Dinner or ANY time of day!

 

Ingredients:

200g/7oz Bacon, chopped

Mushrooms, sliced

Small Onion, sliced

100g/3.5oz Feta Cheese

1 Teaspoon Schwartz Season-All (Herb & Spice Blend)

8 Eggs, room temperature

3/4 Cup Emlea Double Cream (Heavy Cream)

Freshly Ground Pepper to taste

28cm Pie Dish

 

Method

Saute the bacon until crispy. Remove from pan and set aside.

To the same pan add the onions, when they start to soften add the mushrooms, remove from pan and set aside.

In a bowl beat the eggs, cream, season all and pepper together.

Butter your pie dish, scatter 3/4 of the cooked bacon, top with onions, mushroom and crumble the feta cheese on top. Add remaining bacon and pour the egg mixture all over. Shake the dish slightly to make sure the egg mixture has gone down to the bottom.

Bake in oven 180C/350F for approximately 1 hour or until set and slightly browned on top.
