ROASTED CHICKEN TRAYBAKE WITH SWEET POTATOES AND BELL PEPPERS

An all in one pan meal is incredibly easy to make, using a few super tasty ingredients and is ready to eat in an hour. Perfect for a mid-week family dinner

 

Ingredients:

Tray Bake:

2 Sweet Potatoes diced

1 Large Onion quartered

Red and Yellow Bell Peppers cut into 1 inch pieces

Drizzle Olive Oil

Salt/pepper

Fresh Basil and Feta cheese for on top

 

Chicken & Marinade:

Boneless Chicken Thighs

6 Tbls Olive Oil

2 Tbls Honey

2 Tbls Lime Juice or Lemon

2 Tbls Smoked Paprika

4 Teaspoons Garlic Powder

2 Teaspoons Onion Powder

1 Teaspoon Mild Chilli Powder

Salt and pepper

 

Method:

In a small bowl combine all the marinade ingredients together except the olive oil. Add it in last by drizzling and continuously stirring to make the marinade thick like tomato ketchup.

Baste and marinate the chicken pieces from both sides leaving 2 tbls of the marinade to mix later with the potatoes and vegetables. Cover and leave to marinate in the fridge for as long as you can.

Place the chopped potatoes, onions and peppers in a large bowl, add the remaining marinade, a drizzle of olive oil, salt/pepper and mix together.

Pour out onto an oven tray and nestle in the chicken pieces.

Bake in oven 200C/400F for 1 hour or until veggies and chicken are cooked and nicely browned on top. Remove from oven add crumbled feta cheese and some chopped fresh basil.
