EGGPLANT CHERRY TOMATO PASTA

In just a few minutes and with a few simple ingredients, you can make an easy and delicious pasta!

 

Ingredients:

300g/10.6oz Linguine Pasta or of your choice

1 Large Eggplant, diced

10 Cherry Tomatoes, halved

1 Onion, chopped

2 Cloves Garlic, crushed

500ml Tomato Puree

150ml Elmlea Double Cream (Heavy Cream)

25g/1oz Parmesan Cheese

5 Tbls Fresh Chopped Parsley

Salt and pepper

 

Method:

In a little olive oil saute the onions and garlic for 2 minutes. Add the chopped eggplants and saute for 2 more minutes, then add 1/2 cup water, cover and simmer for 5 minutes.

Add tomato puree, salt and pepper, cover and simmer for 15 minutes.

Stir in the cream then add the cherry tomatoes.

Cover and simmer for another 5 minutes.

Stir in drained and cooked pasta, parmesan cheese and parsley.
