DIET CAKE WITH OATS

DIET CAKE WITH OATS, YOGHURT AND PRUNES. ALSO GOOD FOR DIABETICS

This cake is incredibly soft and moist!! Easy to make, no need for mixers just mix everything by hand

 

Ingredients:

130g Oats

160ml Hot Water

150g Greek Yogurt

2 Eggs

60g Erytritol or Stevia sweetener or 120g Caster Sugar

2 Tbls Sunflower Oil

60g Walnuts, chopped

150g Prunes, chopped

40g Almond Flour (Ground Almonds)

Pinch of salt

1 1/2 Tsp Baking Powder

1/2 Tsp Baking Soda

9 x 4 inch Loaf cake tin or just slightly bigger, greased with butter or lined with baking paper

Decoration – Few Slivered Almonds for on top

 

Method:

In a large bowl soak the oats in hot water for 10 minutes.

In a separate bowl with a hand balloon whisk mix the eggs and sugar together.

With a spatula fold in the yoghurt into the oat mixture. Add the oil and fold in then add the prunes and walnuts.

Now add the almond flour, salt, baking powder and soda. Fold in until everything is well combined.

Pour into cake pan, place a few almond flakes on top for decoration and bake in oven 180C for 45 minutes.
